you can also set the "select" argument to the gam plotting function.
For instance:
## print the first smooth term to fig1.pdf
pdf("fig1.pdf")
plot(gam.out, select=1)
dev.off()
## print the second smooth term to fig2.pdf
pdf("fig2.pdf")
plot(gam.out, select=2)
dev.off()
etc...
to see the full help page type ?plot.gam at the R command prompt.
The vis.gam() function can also be useful and gives you a little more
control over what the plot looks like. ?vis.gam for the help page.
